I highly recommend trying out her recipes; they’re healthy and creative without being intimidating for a new cook. I reference them all the time for inspiration.
This is one of my favorites. A solid breakfast that feels indulgent, and great for a morning after a weights session given the extra protein.
Ingredients
½ cup pumpkin puree
¼ cup liquid egg substitute or 2 egg whites
½ scoop vanilla protein powder (I use EAS as it mixes well and is good for cooking)
½ teaspoon pumpkin pie spice
1 packet Splenda or preferred sweetener
1 teaspoon peanut butter
Directions
In microwave-safe bowl, mix well the pumpkin puree, egg substitute or egg, protein powder, sweetener and pumpkin pie spice.
Cook on medium-high for 2 minutes.
In separate bowl, warm the peanut butter in the microwave and drizzle over the cake.
